I love a mixed green base with lemon pepper seasoned salmon filet on top. I add whatever veggies I have on hand but typically will have cucumbers, red peppers, chickpeas and red onion with a sprinkle of Parmesan cheese and homemade vinaigrette! The vinaigrette recipe varies each time but is made with red wine vinegar, olive oil, Italian seasoning, fresh minced garlic and a little bit of Dijon mustard. For a little crunch I’ll throw in a couple croutons! Yum!
