I don't like to cook in general, but I don't want to eat like complete crap either, so I make rice and beans a lot! Microwave the rice (I buy pre-cooked rice), dump some low sodium beans on there, maybe throw in some shredded cheese or guac. Done. It takes maybe 2 mins
