Hard-boil a dozen eggs at the beginning of the week for an easy, delicious, low-cal, healthy snack. Eggs are an excellent source of protein, and one whole large hard-boiled egg has only about 80 calories (they're more filling than you'd think)
Also, frozen/canned veggies aren't necessarily bad for you. They're better than *not* eating veggies in some circumstances, and sometimes they're more nutritive. The frozen steam-in-a-bag veggies are actually quite good.
Busy dietitian here:
1. Roasted veggies. Cut up/purchase pre-cut veggies, mix with a little oil, salt, and pepper, and roast. Oven at 425 until they look done, and boom. Delish.
2. Embrace the freezer. Pre-make soups, breakfast sandwiches, even pancakes. It's a revelation.
