    Dahi pakoriyan is a perfect snack in this hot summer for cooling the body and helping disperse body heat. This fresh and flavorful summer food will keep your body cool in these warm sunny days .

    According to Chinese medicine , there exist “warming foods” and “cooling foods.” "It is said that the cooling foods help to clear heat and toxins from the body, whereas the warming foods increase circulation and raise vital energy,”

    Lets prepare a very simple and delicious cooling food to beat the heat. DAHI PAKORIYAN

    ingredients:

    gram flour 1/2 cup

    all-purpose flour 1/2cup

    yellow food colour 1/2 teaspoon

    salt 2 teaspoon ( need salt more than usual)

    red chilli powder 1 teaspoon

    cooking oil for deep frying

    potatoes one cup(diced and boiled in salted water)

    finely diced onion 3-4 tablespoon

    finely diced tomatoes 3-4 tablespoon

    yogurt 500 ml

    red chilli sauce 3-4 tablespoon or according to taste

    chat masala 2 tablespoon or according to taste

    cilantro for sprinkling

    method:

    1..To make pakoriyan, mix togather gram flour ,all-purpose flour ,yellow food colour ,salt ,red chilli and then add water little at a time to make a smooth paste....be careful about the right consistency of it...it shouldn't be too thick or too runny or watery.......A soft dropping consistency is an essential property for pakoriyan batter.

    2...Heat oil for frying in a wok. take a slotted spoon with round holes.Place it over the wok and pour gram flour mixture on it with the help of another spoon in a way that droplets of the mixture drops in hot oil .until you get a nice light golden brown coloured pakoriyan. remove them from oil.

    3....soak these pakoriyan in water at room temprature for atleast 2 hours or untill they get soft .then drain water.

    4..spread a layer of pakoriyan in a dish ...sprinkle potatoes ,onion,tomatoes on it.

    5.pour yogurt and chilli sauce ...chilli sauce is optional you can skip if you dont like its sweetness .

    6.sprinkle chat masala and cilantro ..(chat masala is easily available in all pakistani and indien grocery stores)

    serve it chilled.
