Dairy Free Chocolate Java Chip Ice Cream
INGREDIENTS
Servings: 2
Prep Time: 5 minutes
For the ice cream:
2 frozen bananas
2/3 cup coconut cream (I use Trader Joe's brand)
2 tbsp nut butter (use SunButter if you're avoiding nuts)
1/4 cup strong coffee, chilled
For the java chocolate chips:
1/3 cup chocolate chips
1/4 cup strong coffee, chilled
PREPARATION
* In a blender, add all of the ice cream ingredients and blend on high for 30 seconds, until smooth. Store in the freezer to chill.
* Next, make the java chocolate chips. Melt the chocolate chips in a small saucepan over low heat.
* Add the coffee and stir together until well blended.
* Put the java chocolate chip mixture into a mini ice cube tray or candy mold. Freeze for about 25 minutes, until frozen.
* Serve the ice cream with the chocolate chips. Enjoy!
