    Oatmeal Raisin Chickpea Cookie Dough

    Servings: 4

    INGREDIENTS

    1 can chickpeas, drained (liquid reserved) and rinsed

    ¼ cup peanut butter

    2 tablespoon honey

    2 tablespoon vanilla

    ½ teaspoon salt

    ¼ cup chickpea water

    ½ cup oats

    ½ cup raisins

    1 teaspoon cinnamon

    Preparation

    Spread drained chickpeas onto a towel and pat dry.

    Remove chickpea shells.

    Place chickpeas, peanut butter, vanilla, honey, baking soda, and salt into food processor.

    Mix halfway then add chickpea water to help consistency.

    Add oats, raisins, and cinnamon to mixed dough.
