When Apple exec Scott Forstall first introduced the new feature in a speech, he pronounced it "reed receipts." I think he would know. And I've never heard anyone say "red receipts."
While a "read receipt" is used to signify that a text has been read (past tense), it's pronounced "reed receipts." I.e. You have reed receipts enabled. You wouldn't say you have red receipts enabled.
