People always say "You Are What You Eat." However, in the dairy industry, this old saying isn't entirely true. Dairy farmers are consistently trying to increase the amount of fat in milk as they are paid premiums based on butterfat content. It is important to have fat in the milk not only for producing other dairy products such as butter and cheese but also because the fats found in dairy products are recommended for humans as a part of a balanced diet by the 2015 U.S. Dietary Guidelines. One may think that we should put more fat in the dairy cow’s ration or feed. However, adding fat to the diet actually has the opposite effect; adding fat to the diet reduces milk fat.
