Methi (Fenugreek) Chicken

Well, all my fellow chefs, this recipe is definitely one that will help you step out of your comfort zone.

Some information before we get into it.

° Use fresh ingredients as much as possible.

° Preparation time will be at most 1/2 an hour and cooking time will be around 1 hour.

° Amount of methi can be increased or decreased depending on affinity for it.

° This recipe requires some cooking prowess and estimation.

Ingredients

° 1kg chicken, washed and cut(either boneless or whole because while boneless is easier to handle and cook, bones help add a nice stock flavour)

° 2 onions (sliced)

° 1 tomato

° 2-3 green chillies

° 7-8 cashews (soaked in warm water)

° 1 cup methi(fenugreek) leaves

° 1tbsp ginger garlic paste

° 1/4-1/2 cup yoghurt (the more you add the lighter the curry and less spicy as well)

° 1 tsp chilli powder

° 1 tsp coriander powder

° 1/2 tsp cumin powder

° a pinch of turmeric powder

° 1/2-1 tsp garam masala

° salt to taste

Preparation

Few things to keep ready before you start

° Sautee the onions in oil till light brown and keep aside to cool after which the curd must be mixed with it.

° Keep the leaves in water that had some salt and sugar in it.

° Make a paste of the green chillies, add a little water if it doesn’t happen

° Puree the tomato

° Make a paste of the cashews

Now we begin cooking.

° Drain the leaves and sautee them in around 2 tbsp of oil till they are somewhere between raw and crisp.

° Keep the leaves aside. Add the ginger garlic paste and green chilli paste to the remaining oil and stir for 2-3 minutes.

° Add all the powders except the garam masala. After mixing well, add the tomato puree.

° In around 3-4 minutes add the curd-onion mix and cook for another 3 minutes.

° Now add all the chicken and mix well. Cook it on medium high heat for a while.

° Reduce the heat, put the lid on and let it cook till the chicken is 3/4th done.

° Add the leaves, garam masala, salt and cashew nut paste and stir well.

° Cook till the curry is your desired consistency.

° Garnish and accompaniments as you desire.
