What Should I Do With This Thing In My Winter CSA?

Ah, the Winter CSA. Home of root vegetables, hearty greens, and all the onions you could ever want. But don’t turn up your nose! These selected flavor pairings (answering the question, "what will this go with?") and tips from The Vegetarian Flavor Bible by Karen Page will inspire you to get the most out of the occasionally weird-looking bounty of November-through-March.

How to read the flavor pairings:

- Flavors marked in regular type are pairing suggested by at least one expert

- Bold marks those recommended by a number of experts

- BOLD CAPITALS mark those very highly recommended by an even greater number of experts

- *BOLD CAPITALS with asterisk (*) mark "Holy Grail" pairings that are the most highly recommended by the greatest number of experts.

Celery Root (aka Celeriac)
