Lemon Parmesan Cauliflower Steaks

This cauliflower recipe has everything you need. It's baked until dark and crispy, then covered with cheese and pine nuts. Put it back in the oven to get melty and gooey and then top with lemon right after it comes out. It is extremely easy to prepare and a huge crowd pleaser.

Ingredients

Before you start, get your station all prepped up. It will make it easier to have everything out and ready to go.

1 large head cauliflower

1 T olive oil, plus more for drizzling

1/2 cup grated parmesan cheese

1/4 cup pine nuts

1 lemon

Instructions

1.Preheat your oven to 420 degrees and line a baking tray with parchment paper.

2.Cut the head of cauliflower in half and then cut each half in half again so you have four large pieces. Don't worry if it falls apart a little bit it will still taste delicious. Make sure you use a large knife so you can cut all the way through the cauliflower and keep the steaks wide (the thinner you try to make them the more likely the florets will come apart)

3. Place them on the baking sheet and drizzle with 1 T of olive oil. Roast for 30 minutes then flip over and roast for 15 minutes more. They should be nice and brown in many spots

4.Remove the cauliflower from the oven and sprinkle the pine nuts and parmesan cheese on top. Squeeze half a lemon over the steaks. Place back in the oven for 5 minutes, or until the parmesan is melted and pine nuts are toasted

5. Remove from oven and serve with the remaining lemon squeezed over top and a little drizzle of olive oil.

PRO TIP: make a lovely green sauce to drizzle over top (all about that presentation)
