AVOCADO SOUP

Few things in life are not enhanced by the addition of avocado. The creamy texture and added health benefits make it a staple among Americans across the nation. Besides the quintessential avocado toast making its appearance on 99.9999% of brunch menus, avocado has another refreshing preparation perfect for spring. SOUP

Pro Tip: Keep avocado halves from browning by storing your cut avocado with a slice of onion in a plastic bag in the fridge

For the Soup:

2 Medium Avocados

3 cups Vegetable Broth

1/4 Cup Cilantro Leaves

1 Lime, juiced

1/2 t salt

1/4 t pepper

Place all ingredients in a blender and blend until smooth. Store in airtight container in fridge until ready to serve.

Jalapeno- Corn Salsa

This salsa adds the perfect crunch. Add a little or a lot to your soup, it's totally customizable and totally delicious.

2 ears of corn

2 jalapeños

1 red onion, chopped

1 garlic clove, minced

1 lime, juiced

1 1/2 tablespoons olive oil

1/4 cup cilantro, roughly chopped

salt and pepper to taste

Grill the corn and jalapeños until charred on all sides. Cut the corn off the husks and chop jalapeño (remove seeds for less heat). Mix all ingredients together and place in the fridge to marinate and let the flavors develop.

Spicy Grilled Shrimp

Shrimp is the perfect protein to add to your spring meal. It's light and tastes great in many different preparations. For this soup, we grilled it but feel free to prepare the shrimp any way you desire!!! That's the best part of cooking at home- you have the ability to customize and change based on your taste preferences.

1 pound shrimp, raw and peeled

1/2 teaspoon ground cumin

1/2 teaspoon ground cayenne pepper

1/2 teaspoon chili powder

1/2 teaspoon freshly ground black pepper

1/2 teaspoon kosher salt

2 garlic cloves, smashed

1 lime

Mix all of the shrimp ingredients together and let marinate for 5 minutes. Put shrimp on skewers to make it easier to flip when grilling. Grill 1-2 minutes per side, until lightly charred.

Lime Cream

this light cream adds a final touch that makes the whole dish come together and makes the appearance instagram worthy (aka the most important aspect of any new dish these days)

3/4 cup reduced-fat sour cream (or greek yogurt)

1 tablespoon cilantro, chopped

1 teaspoon grated lime rind

1/2 teaspoon freshly ground black pepper

Blend together

now that you've made all the delicious components, time to assemble this springtime masterpiece.

Spoon soup into bowls

Lightly place the shrimp on top

Spoon salsa around the shrimp

Drizzle on the lime cream and optionally garnish with a little chopped cilantro.
