Crackle Is Your New Favorite Snack And It's Too Damn Easy To Make

It's hard to stay mad when there's so much beauty in the world.

If you've ever been to New York City, and you're a fan of dessert, you've probably heard of Momofuku Milk Bar.

With a few spots around the city, they dispense some of the best and craziest cookies, cakes, and desserts NYC has to offer.

But what they're most famous for is Crack Pie, a sexy-as-hell marvel of sugar and butter with an oatmeal crust. IT'S GLORIOUS.

But hey, not everyone can get to Milk Bar for it. You try it, you love it, and you want more ASAP. It's called Crack Pie for a reason.

I'd wanted to try my hand at making Crack Pie at home, but it needs a bunch of ingredients, and it's kind of a journey, and come on, I'm busy.

I just want something sweet and chewy to snack on.

So here's the solution: Crackle.

Crackle is a sticky, chewy, sugary gift of a thing from Momofuku Milk Bar Queen Christina Tosi, from her book Milk Bar Life. It's like the best of Crack Pie, with about half the ingredients and ready to eat in about 25 minutes.

Tosi describes it as "crack pie meets brittle". It's as easy as whisking the ingredients together, pouring into pan, adding crunchy bits (anything from pretzels to cereal to popcorn), and baking.

I've tried it with pretzels, Cheerios, and those little half-popped popcorn kernels from Trader Joe's. Crackle made every one of them better.

What you'll need:

* ½ cup granulated sugar

* ¼ cup packed light brown sugar

* 2 tablespoons all-purpose flour

* 1¼ teaspoons kosher salt

* 4½ tablespoons unsalted butter, melted

* ¼ cup heavy cream

* 2 large egg yolks

* ½ teaspoon vanilla extract

* 1½ cup mix-in - mini pretzels/cereal/popcorn/cookies/nuts/etc

DIRECTIONS

1. Preheat the oven to 350°. Grease a 13x18-inch rimmed baking sheet with butter or spray. You can also use a silicone baking mat, which makes getting it out of the pan especially easy.

2. Take a bowl and whisk together the dry ingredients, not including the mix-in. Once they're mixed, pour in your butter, heavy cream, egg yolks and vanilla. Whisk together; it'll take about 20 seconds for the mixture to become smooth and golden.

3. Pour the mixture into your baking sheet and use a spatula to smooth it out to an even thickness. Crush and sprinkle your mix-in over the mixture so it sits gently on top.

4. Bake for 15 to 18 minutes - the mixture will bubble nicely and brown up. Remove from the oven earlier if you want it chewier; leave it a little longer for crunchier brittle.

5. After the crackle has cooled, break it up into pieces, and store in an air-tight container.

Try not to eat the whole lot in one sitting!
