    Mainly made up of cauliflower florets, cubed Asian eggplant, chopped carrot, cumin, coriander, diced onion, minced garlic, mustard seeds, cinnamon, coconut milk, spinach leaves, cilantro etc.

    With a total time of only 45 minutes, this can serve 11 cups easily.

    Fans of Southeast Asian cooking will love the rich coconutty broth and tender cauliflower and eggplant.
