Key word is there "viable" as in still perfectly edible. If it weren't it would be in the bin. Chefs are far too paranoid about poisoning anyone to do otherwise.
Leftovers refers to pre-staged ingredients, cut vegetables, sauces and the like. All of this will only be from the dinner…Â
