How To Make Healthier Ice Cream Sandwiches

    With whole wheat oatmeal chocolate chip cookies (!).

I listen to old episodes of RadioLab or This American Life when making them; NPR goes well with a whole wheat, all-natural dessert. I replace the wheat germ in the recipe with more whole wheat flour.     1. For the cookies you will need:

    2. Line two baking sheets with parchment paper.

    3. Combine the oats, flour, baking soda, baking powder, and salt.

    4. Make sure your butter is room temperature, then beat them together until they're light and fluffy.

    5. Add eggs one at a time and beat just to combine.

    6. Add the vanilla.

    7. Add the combined dry ingredients...

    8. ...then mix just until everything BARELY comes together. Don't overmix.

    9. Add the chopped chocolate chunks.

    10. Do your best not to eat too much of the cookie dough.

    11. Using a spoon or a small ice cream scoop, put cookie dough balls about 3 inches apart on the baking sheets.

    12. Bake them in a 350ºF oven for about 15 minutes.

    13. For the ice cream you will need:

    1 cup whole milk, well chilled

    3/4 cup granulated sugar

    2 cups heavy cream, well chilled

    1–2 teaspoons pure vanilla extract, to taste

    14. With a whisk or hand mixer on a low speed, combine the milk and sugar until the sugar dissolves.

    15. Stir in the vanilla.

    16. Stir in the heavy cream.

    17. Pour the mixture through the ingredient spout into the freezer bowl of your ice cream maker.

    18. FUN PART: Scoop ice cream onto cookie.

    19. Top with second cookie.

    20. Smush into sandwich.

    21. Repeat.

    22. EAT THEM FOREVER.

    Easy Homemade Vanilla Ice Cream

    PREP TIME: 5 minutes

    TOTAL TIME: 30 minutes churning time plus 1 hour in the freezer

    Makes 10 1/2-cup servings

    INGREDIENTS

    1 cup whole milk, well chilled

    3/4 cup granulated sugar

    2 cups heavy cream, well chilled

    1–2 teaspoons pure vanilla extract, to taste

    PREPARATION

    In a medium bowl, use a hand mixer or a whisk to combine the milk and granulated sugar until the sugar is dissolved, about 1–2 minutes on low speed. Stir in the heavy cream and vanilla to taste. Turn machine on, pour mixture into freezer bowl through ingredient spout and let mix until thickened, about 25–30 minutes. Let the ice cream sit in the freezer for about an hour before you scoop it.
