Shag Rug Cake

So pretty, you won't want to eat it. (But you will anyway, 'cause it's so damn good).

Ingredients:

3 Woolworths Choc Orange Mudcakes

For the buttercream:

1.3kgs unsalted butter, at room temp

1.4 kgs icing sugar, sifted

3.5 tablespoons vanilla

1/2-1tsp salt

Assorted food gel colours

Grass piping tips

Method:

STEP 1: To make the buttercream, beat butter on medium speed for 6-8 mins until pale and creamy.

STEP 2: Add the remaining ingredients and mix on low until combined then increase speed to medium for a further 6-8 mins. Scrape down the bowl half way to make sure everything is incorporated. Buttercream should be very light and fluffy.

STEP 3: To assemble the cake, place a small dollop of buttercream in the centre of a cake board or serving plate and place one of the Woolworths Mud Cakes on top. Spread a thin layer of buttercream over the top of the first cake and stack with the second cake. Add another thin layer of buttercream to the top of the second cake and stack the third cake so the bottom of it is facing upwards.

STEP 4: Cover the entire cake in a thin layer of buttercream to trap all the crumbs then refrigerate until firm.

STEP 5: Separate the remaining buttercream into 4 or 5 small bowls and tint with food gel in desired colours. Refrigerate the buttercream for 10 mins to firm up slightly, then place each colour in a piping bag fitted with a grass piping tip.

STEP 6: Remove cake from the refrigerator and pipe in a shag rug style to cover the cake.

STEP 7: Enjoy!
