Servings: Good for 1 pound of pasta
INGREDIENTS
⅛ cup WONDERFUL® Pistachios, No Shells
⅛ cup freshly grated Parmesan cheese
1 cup fresh basil
1 cup fresh mint
3 pinches salt
1 cup good quality extra virgin olive oil
½ lemon, juiced
1 lb pasta
OPTIONAL
1 chicken breast
1 teaspoon of oil for cooking
Fresh veggies (garnish)
PREPARATION
1. Bring a large pot of salted water to a boil, add pasta, and cook until al dente (about 6–8 minutes).
2. In a blender, combine WONDERFUL® Pistachios, No Shells with parmesan, basil, mint, and salt. Blend until ingredients are broken down.
3. Slowly add olive oil and lemon juice. Blend until smooth.
4. Cook chicken or protein of choice to serve with pasta.
5. Toss cooked pasta with pesto until well coated, adding additional oil (and pasta water) to thin out if necessary.
6. Garnish with fresh vegetables and additional grated cheese.
7. Serve with protein and enjoy!
