Asparagus Goat Cheese Toasts

INGREDIENTS

Servings: 6

1 pound fresh asparagus

1 baguette, thinly sliced

2 small goat cheese logs

1 lemon

½ teaspoon salt

½ teaspoon coarse ground pepper

Extra virgin olive oil (garnish)

PREPARATION

1. Preheat broiler to high heat.

2. Using a vegetable peeler, carefully shave asparagus and set aside.

3. Place bread slices under broiler and brown on both sides, about 1 minute, then set aside.

4. Zest the lemon and juice half. Combine with goat cheese, salt, and pepper.

5. Spread about ½ teaspoon of the cheese spread and some of the shredded asparagus on each piece of toast. Lightly drizzle with olive oil.

6. Enjoy!

Pastry-Wrapped Asparagus

INGREDIENTS

Servings: 6

1 pound fresh asparagus

1 pound puff pastry, thawed

¼ cup grated parmesan cheese

1 egg, beaten

Optional easy dipping sauce
½ cup mayonnaise

1 teaspoon Dijon mustard

1 clove garlic, finely minced

Hot sauce, splash

Lemon juice, splash

Black pepper, to taste

PREPARATION

1. Preheat oven to 400˚F/200˚C.

2. Wash asparagus and break off woody stems.

3. Cut pastry into thin strips. Carefully twist a strip of puff pastry around each asparagus spear.

4. Lightly brush with beaten egg and dust with parmesan.

5. Bake 15 minutes or until golden brown.

6. Enjoy!

Asparagus Tempura

INGREDIENTS

Servings: 6

1 pound fresh asparagus

1 cup flour

1 tablespoon cornstarch

2 teaspoons salt

1 ½ cup sparkling water

Vegetable oil for frying

Optional easy dipping sauce
1 cup ranch dressing

2 tablespoons soy sauce

PREPARATION

1. Whisk together the flour, cornstarch, and salt with sparkling water until thoroughly combined. Set aside. This batter is best if it rests for 30 minutes.

2. Place about 2 ½ inches of vegetable oil in saucepan and heat to 350˚F/180˚C.

3. Dip asparagus in batter, making sure to leave about 1 inch at the base of each spear.

4. Fry for about 1 -1 ½ minutes until lightly browned.

5. Drain on paper towels, serve immediately with easy optional dipping sauce.

6. Enjoy!

Marinated Asparagus

INGREDIENTS

Servings: 6

1 pound fresh asparagus

16 ounce apple cider vinegar

2 tablespoons kosher salt

1 ½ teaspoon chili flakes

½ teaspoon allspice

1 cinnamon stick

½ thinly sliced lemon

2 cloves garlic, halved

⅓ cup extra virgin olive oil

PREPARATION

1. Heat vinegar, salt, spices, lemon, and garlic over low heat until salt is completely dissolved and gently simmering. Add olive oil.

2. Remove the bottom woody stems of asparagus and place in a jar or bowl. Pour vinegar mixture over the asparagus and cover. Allow to set for at least 2 hours.

3. Strain and serve.
