Oven-Baked Pancake With Leek And Bacon / Ugnspannkaka Med Fläsk
This oven-cooked pancake is a fall favorite in Sweden.
1 cup flour
2 1/2 cups milk
2 tablespoons melted butter
5 slices of bacon cut in small pieces
1 small leek
Lingonberries or jam, for serving
Preheat the oven to 425º F. Mix flour and salt in a bowl. Add half the milk and whisk until combined. Add the rest of the milk, then the eggs. Add the melted butter.
Cut the leek and the bacon into slices and layer it evenly in a roasting pan. Pour the pancake batter over it and bake it in the middle of the oven for 20-25 minutes or until it is golden. Serve with lingonberries or jam.
