Mango Rice Buddha Bowl

This Mango Rice Buddha Bowl is mesmerising!

Ingredients

Golden Vegetable Rice Salad
1 tablespoon olive oil
1 pack Uncle Ben’s Golden Vegetable Rice
1 tomato, diced
1 red pepper, diced
2 spring onions, sliced
2 tablespoons coriander, finely chopped
Juice of half a lime

Mango Salsa
1 mango, finely diced
1 avocado, finely diced
1 red onion, finely diced
2 tablespoons coriander, finely chopped
½ red chilli, finely chopped
Juice of half a lime
2 teaspoons olive oil

Cajun Spiced Chickpeas
1 tablespoon olive oil
2 garlic cloves, finely chopped
½ teaspoon smoked paprika
½ teaspoon cumin
½ teaspoon dried oregano
½ teaspoon salt
¼ teaspoon black pepper
400 grams chickpeas

Pickled Red Cabbage and Apple
¼ of a red cabbage, finely sliced
1 apple, finely sliced
¼ teaspoon salt
4 tablespoons white wine vinegar

Preparations

  1. Start by preparing your Uncle Ben’s Golden Vegetable Rice salad. Take a large frying over a medium heat and add the oil, leave to warm for a 1 or so then add the rice. Cook for 2–3 minutes stirring continuously making sure the rice is piping hot.

  2. Remove from the heat and add to a bowl. Next add the tomato, red pepper, spring onion, coriander and lime juice to the bowl and stir thoroughly. Set aside.

  3. Next move onto the preparation of the mango salsa. Add the mango, avocado, red onion, coriander, chilli, lime juice, and olive oil to a bowl and stir until fully combined. Set aside.

  4. To prepare the Cajun spices chickpeas, place a large frying pan over a medium heat and add the oil. Once warm add the garlic, smoked paprika, cumin, garlic granules, oregano, salt, and black pepper. Cook for around 2–3 minutes or until the herbs and spices are toasted an the garlic is just starting to brown.

  5. Next add the chickpeas and continue to cook for around 2–3 minutes or until the chickpeas are warmed through. Remove from the heat and set aside.

  6. If choosing to add the pickled red cabbage and apple to your creation, simply add the red cabbage, apple, whine wine vinegar and salt to a bowl. Stir until combined and set aside.

  7. Once all your components are ready it’s simply time to build your very own Buddha bowl and enjoy!
