Easy One Pot Chicken Curry
This super-easy spicy chicken one pot curry is so easy to make, you'll be making it for lunch and dinner! 🍛

Ingredients:
1 tablespoon Sunflower Oil
1 White Onion, chopped
1 tablespoon Curry Paste, Madras works well
400g Chopped Tomatoes
2 Chicken Breasts, chopped
150g Frozen Peas
250g Uncle Ben's Golden Vegetable Rice
Small Handful of Fresh Coriander, chopped
Preparation
1. Heat the sunflower oil over a medium heat in a large pan. Add the onion and soften for 5 minutes or so, until translucent.
2. Add the curry paste and stir to coat the onions. Cook for 2 more minutes.
3. Add the chopped tomatoes and bring to the boil. Reduce the heat to low and add the chopped chicken breasts.
4. Simmer the curry for 15–20 minutes, or until the chicken is cooked through.
5. Finally, stir through the frozen peas and Uncle Ben’s Golden Vegetable rice for 2 minutes (or until heated through). Season to taste and serve, topped with chopped coriander.
