HOT, HOTTER, HOTTEST WINGS

LEMON PEPPER WINGS

Makes 15 wings


INGREDIENTS

1 cup lemon juice (4 lemons)
1 cup olive oil
1 tablespoon salt
1 tablespoon black pepper
2 teaspoons granulated garlic
Zest from 2 lemons
15 chicken wings

PREPARATION

  1. Combine lemon juice, olive oil, salt, pepper, granulated garlic, and lemon zest in a large bowl and add chicken wings. Toss to coat, then refrigerate overnight.
  2. Light one side of your grill to medium-high heat (between 350 and 400F) and leave one side of the grill "cold".
  3. Start the chicken wings on the cold side of the grill, with the lid closed. Grill for 20 minutes, turning once.
  4. Finish the wings on the hot side of the grill over a medium-high flame for another 10 minutes, turning every few minutes to make sure they evenly crisp and brown. Enjoy!


CHIPOTLE HONEY WINGS
Makes 15 wings

INGREDIENTS

15 chicken wings
Dry rub
2 tablespoons salt
1 tablespoon black pepper
1.5 tablespoons paprika
Wing sauce
1 cup chipotle peppers in adobo
3 tablespoons apple cider vinegar
3 tablespoons honey
2 tablespoons lime juice
2/3 cup butter
1 1/2 teaspoons salt

PREPARATION

  1. Remove chicken wings from packaging and pat dry. Season all over with dry rub, then place in a single layer on a baking sheet, refrigerated, until ready to grill.
  2. To make wing sauce: Puree the chipotle peppers in a blender until smooth. Add to a saucepan with the vinegar, honey, lime juice, butter and salt. Cook over medium heat until butter melts, then allow to bubble for a minute, thickening slightly. Set aside to cool.
  3. Light one side of your grill to medium-high heat (between 350 and 400F) and leave one side of the grill "cold".
  4. Start the chicken wings on the cold side of the grill, with the lid closed. Grill for 20 minutes, turning once.
  5. Use the wing sauce to baste the side of the chicken wing that's facing you, then flip that side down onto the hot part of the grill. Baste the other side of the wing that's now facing up. Finish grilling the wings over a medium-high flame for about another 10 minutes, or until the sauce has caramelized, turning every few minutes.
  6. Pour remaining sauce over wings and enjoy!


HABANERO LIME WINGS

Makes 15 wings


INGREDIENTS

15 chicken wings


Dry rub

2 tablespoons salt


1 tablespoon black pepper


1.5 tablespoons cayenne


Wing sauce

1 cup habanero hot sauce


1/2 cup butter


1 tablespoon honey


1 lime, juiced


PREPARATION

  1. Remove chicken wings from packaging and pat dry. Season all over with dry rub, then place in a single layer on a baking sheet, refrigerated, until ready to grill.
  2. To make the wing sauce: Combine habanero hot sauce, butter, honey and lime juice in a small saucepan and cook over medium heat until butter melts. Allow mixture to bubble for a minute, thickening slightly, then set aside to cool.
