INGREDIENTS
1 cup lemon-lime soda or sparkling water, room temperature
3 tablespoons fresh lemon juice
1 85g packet peach flavoured gelatin powder
1 7.2g packet unflavoured gelatin powder
1 cup lemon-lime soda or sparkling water, chilled
Edible sprinkles
Oil based cooking spray
PREPARATION
1. In a small sauce pot, combine 1 cup of room temperature lemon-lime soda with 3 tablespoons fresh lemon juice, 1 85g packet of peach flavoured gelatin powder and 1 7.2g packet of unflavoured gelatin.
2. Stir together and allow to sit for 2 minutes.
3. Turn the heat to low and allow the mixture to come to a gentle simmer until all of the gelatin has dissolved.
4. Turn off the heat, add 1 cup of chilled lemon-lime soda and stir to combine.
5. Spray a 20 ounce square or rectangle shaped tupperware container well with oil based cooking spray.
6. Pour the gelatin into the prepared container, top with lid and transfer to the fridge to set for a minimum of 6 hours or up to overnight.
7. When you are ready to serve, turn the set mixture out onto cutting board and slice into cubes - you can also use a small cookie cutter to cut the mixture into fun shapes!
8. Dip the top of each gelatin bite into edible sprinkles and enjoy right away! The sprinkles will begin to dissolve if you leave them for too long
