Quinoa Rice Shakshuka
Serves 2
Ingredients
250g SunRice Microwave Brown Rice and Quinoa
1 + 1/3 cup tomato passata
1/2 cup roasted capsicums, chopped
4 eggs
100g feta
1/4 tsp smoked paprika
1/2 tsp salt flakes
1/2 tsp pepper
2 tsp garlic infused olive oil (or regular olive oil)
Garnish
2 tbsp parsley, roughly chopped
2 lemon wedges
To Serve

Method
STEP 1: Spoon the SunRice Microwave Brown Rice and Quinoa into two microwave safe bowls. Then top with the tomato passata and roasted capsicums. Crack two eggs into each bowl, then finish with crumbled feta. Sprinkle with paprika, salt, pepper, and drizzle with olive oil.
STEP 2: Place Shakshuka into the microwave to cook for 2-3 minutes or until the whites of the eggs are just cooked.
STEP 3: Garnish the Shakshuka with the parsley and lemon.
STEP 4: Enjoy!
Easy Bibimbap
Serves 2
Ingredients
250g SunRice Microwave Long Grain White Rice
1 carrot, shredded
1 cup baby spinach leaves
1 cup bean shoots
1 cucumber, sliced
2/3 cup kimchi
2 egg yolks
2 tbsp gochujang
2 tsp sesame oil
2 tsp soy sauce
2 tsp sugar
2 tsp rice wine vinegar
To Garnish
1/2 tbsp sesame seeds
Method
STEP 1: Heat up the SunRice Microwave Long Grain White Rice according to packet directions. Then divide the rice between two serving bowls.
STEP 2: Make the dressing by combining the gochujang, sesame oil, soy sauce, sugar and rice wine vinegar in a bowl. Mix well.
STEP 3: To build the Bibimbap, top the rice with the carrot, spinach, bean shoots, cucumber, kimchi, and the raw egg yolk.
STEP 4: Finish the Bibimbap with the dressing, and sprinkle over sesame seeds.
STEP 5: Stir to mix.
STEP 6: Enjoy!
Omurice In A Mug
Serves 2
Ingredients
250g SunRice Microwave Long Grain White Rice
6 eggs
4 tbsp milk
1 spring onion, sliced
1/4 tsp salt flakes
1/4 tsp cracked pepper
2 tbsp tomato sauce
1 tbsp soy sauce
Method
STEP 1: Divide the SunRice Microwave Long Grain White Rice between two mugs.
STEP 2: Add three eggs to each mug, then divide and add the milk, salt and pepper. Divide half of the spring onions between the mugs, and set aside the other half to garnish. Mix until well combined.
STEP 3: Place each mug into the microwave to cook for 2-3 minutes or until the egg is just cooked.
STEP 4: In a small bowl, combine the ketchup and soy sauce. Drizzle the sauce over the Omurice. Garnish with the remainder of the spring onions.
