3 tbsp olive oil
1 brown onion, finely diced
2 garlic cloves, minced
1 red capsicum, diced
1 tsp ground smoked paprika
2 x 250g Packets SunRice Microwave Brown Rice
400g of diced tomatoes
1/4 tsp saffron threads
1 1/2 cups vegetable stock
1 tsp salt flakes
1/4 tsp cracked pepper
1 cup frozen peas
500g king prawns, deveined and de-shelled
1/2 cup parsley, roughly chopped
1 lemon, sliced into wedges
STEP 1: Place a large shallow pan over medium heat. Add the olive oil and onion to the pan and cook for 4 minutes until the onion is soft and translucent.
STEP 2: Next, add the garlic, capsicum and paprika and cook for 4 minutes or until the paprika is fragrant and capsicum is soft.
STEP 3: Add the SunRice Microwave Brown Rice, tomatoes, saffron and vegetable stock to the pan and stir well, then bring the rice to a simmer. Cook for 10 minutes, stirring occasionally, until almost all of the liquid has reduced. Season with salt and pepper.
STEP 5: In the last moments, add the peas and prawns to the pan and use a spoon to push them into the rice. Place a lid on top, and cook for a further 5 minutes or until the prawns are cooked through.
STEP 6: Remove the pan from heat and garnish with chopped parsley and lemon wedges.
