Cauliflower Parmesan

INGREDIENTS

Marinara sauce

4 tablespoons olive oil

½ onion, chopped

2 clove garlic, chopped

2 (28 oz) cans Shoprite San Marzano Crushed Tomatoes

1 bay leaf

2 large sprigs fresh basil

Salt and pepper, to taste

Breaded cauliflower steaks

1 head of cauliflower

3 cups panko

1 teaspoon dried basil

1 teaspoon dried oregano

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt plus pinch

1/2 tsp pepper plus pinch
1 cup flour

4 eggs

Olive oil

Assembly

1 cup shredded parmesan

8 oz fresh mozzarella, sliced

¼ cup fresh basil, chopped

PREPARATION

  1. Preheat oven to 375℉/190℃.

  2. In large heavy bottomed pot, heat 3 tablespoons olive oil and add chopped onions. Saute on medium low until softened. Add garlic and saute for 30 seconds.

  3. Add San Marzano tomatoes. Stir in bay leaf and basil sprig.

  4. Simmer the sauce for 1 hour, stirring occasionally.

  5. Remove and discard basil sprigs and bay leaf. Season sauce to taste with salt and pepper.

  6. While sauce is cooking, trim cauliflower stem and slice vertically into 1-inch-thick steaks.

  7. Take out 3 large shallow bowls or baking dishes. In one bowl, combine 3 panko with basil, oregano, garlic powder, onion powder, salt, and pepper.

  8. In another bowl, add flour and mix with pinch of salt and pepper. In last bowl, lightly whisk eggs.

  9. Dredge cauliflower steaks in flour, then dip in egg mixture, and finally coat in thick layer of panko breading.

  10. Heat frying pan on medium and cover with olive oil. When oil is heated, add one or two breaded cauliflower steaks and fry, flipping once, until golden brown. Repeat with each steak.

  11. In large baking dish, spoon marinara sauce into bottom of dish until well coated and about an inch deep.

  12. Add layer of shredded parmesan onto marinara, then arrange steaks on top of parmesan and sauce, pushing down slightly to cover sides of steaks.

  13. Top each steak with sliced mozzarella.

  14. Cook in oven for 30-40 minutes until top is browned. Top with fresh basil.
