Preheat oven to 400℉2. Crush tortilla chips in a storage bag using a rolling pin and set aside.3. Add turkey, eggs, taco seasoning, and tortilla crumbs to a mixing bowl and mix to combine. 4. Using a scoop for consistency, shape meatballs and place in a baking dish coated with 1 tablespoon of olive oil.5. Bake 8 minutes on one side. Turn and bake for another 6 minutes until meatballs are light brown and semi-soft.6. Cover the meatballs with salsa and cheese.7. Bake for 25-30 minutes or until bubbling and meatballs are cooked through. (The internal temperature of the meatballs should be 160℉.)8. Garnish with scallions, sour cream, and tortilla chips9. Enjoy!
