INGREDIENTS
2 pounds ground turkey
2 eggs
2 cups tortilla chips
1 packet taco seasoning
5 cups thick and chunky–style salsa
¼ cup shredded cheddar and/or jack cheese
Chopped scallions
Tortilla chips for garnish
Olive Oil (for sauteing)
PREPARATION
1. Preheat oven to 400℉
2. Crush tortilla chips in a storage bag using a rolling pin and set aside.
3. Add turkey, eggs, taco seasoning, and tortilla crumbs to a mixing bowl and mix to combine.
4. Using a scoop for consistency, shape meatballs and place in a baking dish coated with 1 tablespoon of olive oil.
5. Bake 8 minutes on one side. Turn and bake for another 6 minutes until meatballs are light brown and semi-soft.
6. Cover the meatballs with salsa and cheese.
7. Bake for 25-30 minutes or until bubbling and meatballs are cooked through. (The internal temperature of the meatballs should be 160℉.)
8. Garnish with scallions, sour cream, and tortilla chips
