13 Quick And Affordable Vegetarian Meals

Happy World Vegetarian day to all my fellow green pals! Here are some of my go-to affordable and satisfying veggie dishes. By Maxine Kozak, Storyteller for RU Student Life.

1. Quick and easy naan pizza

Preheat your oven to 400 degrees and get out your naan bread, pizza sauce, mozzarella cheese. Get creative with your toppings! My personal favourite toppings are spinach, red onion and green peppers - boring, I know. After 10 minutes in the oven, your pizza is ready to eat.

2. Enjoy some vegetable fried rice

This is an easy one. I usually fry up some broccoli, green onions, pineapple and carrots, but you can use any vegetable you'd prefer. After frying up the rice and adding an egg, I'll typically add some soy and thai sauce for flavour.

3. So many salad options

I have two go-to salad choices - the first one is just a simple Caesar salad, with romaine lettuce, croutons, parmesan and caesar dressing. The second one is a little more complicated. I'll start off by making some candied pecans on the stove with butter and brown sugar, setting them aside to cool. Next, I'll cut up my veggies: cucumber, green onion, carrots, and even some strawberries. I'll mix up some romaine lettuce, kale and spinach, and crumble some feta cheese as well. Finally, I'll top it off with my favourite dressing - Kraft's Fig Balsamic (which is impossible to find by the way, you have to go to Metro), and you're good to go.

4. Spice up your grilled cheese

Pick up some some freshly baked egg bread (my fave), mozzarella cheese, spinach and green apples. Four easy ingredients and you can make these delicious grilled cheese sandwiches all week.

5. Stock up on veggie burgers

I've fallen in love with veggie burgers this year. There's just so many options. SOL Cuisine makes three of my favourites: the chickpea sweet potato burger, quinoa chia burger and their original soy burger with a delicious BBQ flavour. Every vegetarian should keep their freezer stocked up with these three delicious options. You'll also want to try the Hub Cafe's chick pea and brown rice burger on campus, another one of my go-to's.

6. Don't miss out on sweet potato and black bean tacos

Tacos used to be my favourite before I became a vegetarian, so I just had to find a meatless option that measured up. Sure enough, these sweet potato and black bean tacos turned out to be exactly what I needed. Cut up your sweet potatoes into small cubes and toss them with olive oil, chili powder and salt on a baking sheet and let them roast in the oven for 30 minutes at 450°F. In a saucepan, combine the potatoes black beans and some salsa, cooking on medium until warm. Serve on a soft tortilla shell with avocado, lettuce, sour cream and cheese.

7. Good ol' mac n cheese

Another easy one. All you'll need is flour, butter, macaroni, cheese, milk and some bread crumbs. Get in-depth instructions on how to make the cheese sauce here.

8. Get your day going with an egg LT bagel

This is my go-to breakfast meal but it's great for any time of day because who doesn't like breakfast for dinner? Fry an egg and serve it on a bagel with mayo, lettuce, tomato, cheese and avocado.

9. Can't forget sushi

On those days where you just don't feel like cooking, there's some delicious vegetarian sushi options. Kawa Sushi on Church Street is extremely affordable and serves two of my favourites: the avocado-cucumber roll (tip: ask them to add tempura bits for an extra crunch) and the yam-tempura roll.

10. Try this chickpea salad

This dish is easy and reminiscent of good old potato salad. Mix mashed chickpeas, mayo, cider vinegar, sugar, mustard, garlic powder, pickles, celery and onion in a bowl and serve it as a sandwich or with crackers to dip.

11. Simple spinach, humus and bell pepper wraps

For a simple but great lunch recipe, make some spinach, humus and bell pepper wraps in a soft tortilla. Thai sauce is a great addition for a bit of extra flavour.

13. Zoglos anything

Speaking of Zoglos...they offer a meatless substitute for just about anything. My personal favourite is their sweet potato cutlets, but everything they make is delicious.
