Ingredients:
90ml of butterfly pea dry gin
250ml pineapple juice
125ml soda water
30ml lime juice
1 cup of caster sugar
1 cup of water
2 pieces of dried pineapple
2 sprigs of mint
2 cups of ice
Method:
STEP 1: Add the sugar and water to a heavy based saucepan and place over medium heat. Bring to the boil, and then turn down to a simmer. Once the sugar has dissolved, pour the sugar syrup into a bowl, and set aside to cool.
STEP 2: Take two cocktail glasses, and add ¾ cup of ice and 45ml of gin to each glass. Then garnish each glass with a sprig of mint and a piece of dried pineapple.
STEP 3: Place the pineapple juice, soda water, lime juice, 30ml of sugar syrup and extra ice into a cocktail shaker and shake until well combined.
STEP 4: Strain the ice from the cocktail shaker, pour the cocktail into the glasses and watch as the gin changes colour.
STEP 5: Enjoy!
