Wholesome Avocado And Veggie Toast


Servings: 2

4 thick slices whole wheat bread

1 cup cherry tomatoes, halved

1 capsicum, diced

1 tablespoon olive oil

Salt, to taste

Pepper, to taste

1/2 lemon, juiced

2 eggs

1 ripe avocado, sliced

1/3 cup ricotta cheese

1 cup rocket

3 tablespoons parmesan, shaved

Nescafé Gold Premium Iced Coffee, Espresso Kick


1. In a pan over medium-high heat, add the olive oil, halved tomatoes, and capsicum. Sauté until starting to soften, then add lemon juice and cook for 1 additional minute. Remove from pan. 

2. Cook eggs in the pan and season with salt and pepper.

3. Toast the bread, then spread a thin layer of ricotta on top of each piece. Layer the veggies, sliced avocado, rocket, egg, and shaved parmesan on top. 

4. Enjoy with a glass of Nescafe Gold Premium Iced Coffee, Espresso Kick!
