Easy Chicken Fajitas Recipe
Ingredients:
* 1 Tbsp olive oil
* 700g (1 1/2 lbs) chicken thighs skinless, boneless, sliced
* 3 bell peppers red, yellow, green
* 1 large red onion sliced
* 10 flour or corn tortillas
* 1 lime cut into wedges
* a small handful of fresh cilantro chopped
* 1/4 cup sour cream
* 1 avocado sliced (optional)
* 1 jalapeno thinly sliced
Chicken Fajitas Seasoning Recipe:
* 1 Tbsp cayenne pepper
* 1 Tbsp paprika
* 1 Tbsp garlic powder
* 1 Tbsp cumin
* 1 Tbsp dried oregano
* 1/2 Tbsp sea salt
* 1/4 Tbsp fresh ground pepper
Instructions:
# Heat oil in a large cast iron pan over medium heat.
# Add chicken and 1 Tbsp of fajita seasoning, then cook for about 6-8 minutes, stirring every minute or so.
# Once the chicken is cooked through and golden brown, bring it to the side of the pan to make space for the veggies.
# Add peppers, onion, juice of 1 lime and sprinkle with 1 tsp of seasoning. Cook for about 3-4 minutes, then toss well to combine.
# Spoon the chicken, onions, and peppers into warm tortillas. Squeeze lime juice and garnish with sliced jalapeno, sour cream, and cilantro.
# Serve and enjoy!
