Everybody and their brother is crazy for Avocado these days. Whether it’s smoothies, salad, or toasts, we are spending countless hours combing the internet to find the best Avocado recipes.

And why shouldn’t we? It’s healthy, super nutritious, and most important it adds texture and taste to our dishes.

Take a quick look at its benefits and see why we should eat more of it.

INGREDIENTS:

•1/4 cup fresh raspberry

•1/4 cup blue cheese, crumbled

•1 large rippen avocado

•salt and pepper to taste

•2 sliced of bread of choice, toasted

INSTRUCTIONS:

In a small bowl, mash the avocado with a fork. Add salt and pepper to taste and mix to combine.

Spread the creamy avo on your bread toasts and top it with blue cheese and fresh raspberries.

INGREDIENTS:

•2 sliced bread of choice, toasted

•1 ripe avocado, sliced

•2 free range eggs

•8 slices of bacon

•1 tsp chilli flakes

•salt and pepper to taste

INSTRUCTIONS:

1.Preheat a pan over medium high heat. Once hot, add the bacon and cook until crispy, about 3-4 minutes.

2.Set aside on a plate.

3.In the same pan, crack 2 eggs, lower the heat and cover the pan with a lid. Cook for 2-3 minutes, or until the eggs are cooked to your preferred consistency.

4.Add the half of sliced avocado on each toast, and layer the bacon and egg on top. Sprinkle with chilli flakes and enjoy!

INSTRUCTIONS:

•1/4 cup walnuts, raw or toasted

•2 avocados, smashed

•salt and pepper to taste

•4 slices bread, toasted

•1/2 apple, thinly sliced

•2 slices gorgonzola cheese

•2 slices of bread of your choice, toasted

Smoked Salmon Avocado Toast Recipe

INGREDIENTS:

•4 slices crusty bread of choice, toasted

•1 ripe avocado

•80g smoked salmon

•1 Tbsp chopped dill, to garnish

•For the honey mustard dressing

•¼ cup prepared mustard, Dijon or with horseradish

•2 Tbsp extra virgin olive oil

•3 Tbsp honey

•2 Tbsp lemon juice

•½ tsp ground cumin

•1/4 tsp sea salt

INSTRUCTIONS:

1.To make the dressing, add all the ingredients to a jar, fit with a tight lid and shake until well combined.

2.Smash the avocado on your bread slices with a fork, top it with smoked salmon and pour over the honey mustard sauce.

Mushroom and Parmesan Avocado Toast Recipe

INGREDIENTS:

•200g chestnut mushrooms, sliced

•2 Tbsp dairy free butter

•1 garlic clove, grated or minced

•1 tsp smoked paprika

•1/4 tsp sea salt

•1 Tbsp lime juice

•pinch freshly ground black pepper

•2 avocados

•1/4 cup shaved parmesan

•1 red chilli, sliced

•4 slices bread – I used sourdough

INSTRUCTIONS:

1.In a shallow dish, mash the avocado with a fork into your desired consistency. Add the lime juice and season with salt and pepper. Mix well to combine and set aside.

2.Place a frying pan onto a medium heat. Once hot, add the butter, garlic, paprika, salt, pepper and mushrooms and stir fry for about 4 minutes.

3.Place the bread slices into a toaster to toast. When ready, remove the avocado from the fridge and spread it evenly on top of each slice. Then, place a quarter of the mushroom mixture on top of each slice, add shaved parmesan and some chilli and serve.

INGREDIENTS:

•1 cup pomegranate seeds (from 1 pomegranate)

•1 Tbsp fresh mint, finely chopped

•2 tsp balsamic vinegar

•1 tsp orange zest

•2 tsp orange juice

•1 tsp finely diced jalapeño (stems and seeds removed)

•1 Tbsp finely minced shallot

•½ tsp sea salt, divided

•4 slices whole grain bread, toasted

•1 large avocado (or two small)

•Juice of ½ lemon

•1/4 cup goat cheese

INSTRUCTIONS:

1.In a small bowl, combine pomegranate arils, mint, balsamic, orange zest, juice, jalapeño, shallot, and ¼ tsp sea salt. Mix to combine.

2.Place avocado in a separate bowl and mash with a fork. Add lemon juice and remaining ¼ tsp salt. Mix to combine.

3.Spread mashed avocado on toast. Top with pomegranate salsa and sprinkle with goat cheese.

Honey Garlic Shrimp Avocado Toast Recipe

INGREDIENTS:

•250g /0.5 pound peeled and deveined raw shrimp

•2 avocados

•salt and pepper to taste

•1/2 lime, juiced

•4 pieces of bread, toasted

•3 Tbsp honey

•1 Tbsp soy sauce

•1 Tbsp olive oil

•1 tsp garlic powder

•1/4 tsp dried parsley

•lime wedges to garnish

INSTRUCTIONS:

1.Season the shrimp with salt and black pepper.

2.In a small bowl, mix the honey, soy sauce, garlic powder and 1 Tbsp lime juice together, stir to combine well.

3.Heat up a skillet with the olive oil. Once it’s heated, add the shrimp and cook for a couple of minutes.

4.Add the honey mixture into the skillet, spooning the honey lime sauce on the shrimp. Cook for additional 3-4

INGREDIENTS:

•2 Tbsp Olive oil , divided

•1 ripe avocado

•250g Halloumi, rinsed and cut into 1cm slices

•1.5oz.40g rocket

•juice from 1/2 lemon

•2 tbsp black olive paste

•4 slices crusty bread of your choice, toasted

•1/4 cup sun blushed tomatoes

•salt and pepper to taste

INSTRUCTIONS:

1.Heat a frying pan with a little olive oil over a high heat. Fry the Halloumi slices on each side in the hot pan until golden, about 1-2 minutes per side.

2.Meanwhile, in a small bowl, toss together the rocket, olive oil, salt, pepper and lemon juice.

3.Smash 1/4 of avocado on each slice of toasted bread. Spread the olive paste over the toast, then top with the rocket mixture. Add fried Halloumi and sun blushed tomatoes.

As you can see, I like mixing cheese with berries. They go perfect together, and fruits are excellent for balancing the strong taste of cheese.

•1 slice of whole wheat bread, toasted

•1/4 of a California Avocado, mashed

•2 large strawberries, sliced

•1 tbsp goat cheese, crumbled

•1 tbsp balsamic glaze, drizzled
