What's Better Than Fresh Summer Corn? Using It To Make This Delicious Corn Chowder In Under 30 Minutes

1 tablespoon oil

3 cloves garlic, minced

Salt, to taste

Pepper, to taste

1 red bell pepper, diced

1 potato, cubed

1 ear corn, kernels removed

6 cups vegetable broth

2 cups water

1 tablespoon thyme

2 tablespoons paprika

1 bay leaf

1 cup milk/ milk alternative


1. Combine oil, garlic, and onion, salt, and pepper in a large pot over medium heat for 3 minutes.

2. Add red pepper, potato, and corn. Stir for another 2 or 3 minutes.

3. Add vegetable broth, water, thyme, paprika, and bay leaf.

4. Bring to a boil, place the lid on the pot, and simmer for 10 minutes.

5. Add milk or milk alternative, and stir.

6. Allow to cool, and enjoy!
