Chicken Katsu With Japanese Curry

Serves 4

Ingredients

2 x 25g sachet McCormick Katsu Crumb Street Food Seasoning

1 tbsp white and black sesame seeds

2 tbsp red miso

1 ½ tbsp sesame oil

500g chicken breast fillets

1 cup plain flour

3 eggs, lightly whisked

1 ½ cups vegetable oil, to deep fry

To garnish

Spring onions, sliced thinly

Cooked sushi rice

Japanese curry sauce

Method

STEP 1: Place the McCormick Katsu Crumb Street Food sachets in a large mixing bowl along with sesame seeds.

STEP 2: In a small bowl, combine miso and sesame oil, then place flour and eggs in separate bowls.

STEP 3: Coat chicken in miso mixture, then flour, then egg, then the McCormick Katsu Crumb Street Food crumbs, coating well.

STEP 4: In a large deep frying pan, heat vegetable oil over medium/high heat. Cook chicken for 5-7 minutes or until cooked through and golden crispy.

STEP 5: Serve with sushi rice, a drizzle of curry sauce and spring onions.

Mexican Spiced Mushroom Tacos

Serves 6-8

Ingredients

2 tbsp garlic infused oil

1 x 25g sachet Mexican Style McCormick Street Food Seasoning

100g Shiitake mushroom, sliced thinly

150g Oyster mushrooms, sliced thinly

200g brown swiss mushrooms, sliced thinly

50g butter

2 corn cobs, corn sliced off

½ cup coriander leaves, finely chopped

200ml sour cream

1 tbsp chipotle in adobo sauce

12 x 10cm mini tortilla wraps

To garnish

Green chilli, sliced thinly

Red cabbage, sliced thinly

Lime cheeks

Method

STEP 1: In a large frying pan over high heat, heat the garlic oil.

STEP 3: Add mushrooms and sprinkle over Mexican Style McCormick Street Food Seasoning. Cook mushrooms for 5 minutes until browned, stirring occasionally. Remove from the pan.

STEP 4: In the same pan, melt butter. Cook corn kernels for 5 minutes or until slightly charred and buttery. Stir through coriander leaves.

STEP 5: In a small mixing bowl, combine sour cream and adobo sauce.

STEP 6: Heat taco wraps for 1 minute over high heat until slightly charred and slightly toasted.

STEP 7: Serve tacos with mushroom mixture, corn mixture, drizzle sour cream and garnish with chilli and red cabbage, then squeeze lime over the tacos.

STEP 8: Enjoy!

Caribbean Style Jerk Chicken

Serves 6

Ingredients

2 x 25g sachet Caribbean Jerk McCormick Street Food Seasoning

4 spring onion, cut into 3cm pieces

1 brown onion, chopped roughly

1 tbsp olive oil

½ cup soy sauce

1kg chicken wings

To garnish

Spring onion, sliced thinly

Chives, finely chopped

Method

STEP 1: Line 2 large baking trays with baking paper and preheat the oven to 200°C.

STEP 2: In a food processor, process Caribbean Jerk McCormick Street Food Seasoning, spring onion and onion until finely chopped. Pour in the soy sauce and oil while the motor is running to form a thick paste.

STEP 3: Add the chicken wings to a large mixing bowl and coat with jerk sauce.

STEP 4: Lay the chicken wings on the lined tray then place in the oven to cook for 20 minutes or until cooked through and crispy.

STEP 5: Serve with chives and spring onions.
