The Old Fashioned
Apple Cider Reduction
1 piece orange peel
2 cinnamon sticks
4 cups apple cider
15-20 drops bitters
1 bottle (750ml) whiskey
1 cup apple cider reduction
1. Combine the apple cider, cinnamon, sticks and orange peel in a saucepan.
Bring to a simmer and reduce by half. The reduction should be thick enough to coat a spoon. Remove the cinnamon and orange peel and refrigerate until cold.
2. In a pitcher, combine bitters, apple cider reduction, and whiskey. Chill until cold.
3. Pour over giant ice cubes in a rocks glass.
4. Garnish with orange peel and maraschino cherries.
