Sloppy Joe Meatball Bread Boat

Servings: 8

Ingredients:

  • 1 egg
  • 1⁄3 cup bread crumbs
  • 2 teaspoons kosher salt
  • 1 tablespoon tomato paste
  • 1 teaspoon brown sugar
  • 1 teaspoon yellow mustard
  • 1⁄2 teaspoon chili powder
  • 1⁄2 teaspoon Worcestershire sauce
  • 1 pound Kroger ground beef Vegetable oil
  • 1 (15-ounce) can sloppy joe sauce
  • 1 large loaf soft Italian or French bread
  • 8–10 provolone cheese slices
  • Minced parsley, for garnish

Preparation:

  1. Preheat oven to 350oF.
  2. In a bowl, mix together egg, bread crumbs, kosher salt, tomato paste, brown sugar, yellow mustard, chili powder, and Worcestershire sauce. Stir in Kroger ground beef.
  3. Combine well, but do not overmix. With oiled hands, roll the meat into golf-size balls.
  4. Heat a large skillet with a drizzle of vegetable oil. Brown meatballs on all sides. Add insloppy joe sauce and stir to combine.
  5. Cover and cook for 7–9 minutes or until meatballs are cooked through. Remove from heat.
  6. Cut out the center of the loaf of bread, pulling out the soft middle with your hands, to form a boat. Line the inside with a few slices of provolone cheese.
  7. Place on a sheet tray and bake for 5–7 minutes to melt cheese and crisp up bread.
  8. Remove from oven.
  9. Fill boat with meatballs and sauce. Drape a few more provolone cheese slices over the boat.
  10. Put back in the oven for about 5 minutes to melt the cheese. Remove from oven.
  11. Garnish with minced parsley and serve.
