Chili Cheese Bread Bowls

Servings: 4

Ingredients:
  • 2 tablespoons olive oil, divided
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 4 cloves garlic, minced
  • 1 pound ground beef
  • 1 packet Kroger Original Chili Seasoning Mix
  • 1 can Kroger Diced Tomatoes
  • 1 can Kroger Dark Red Kidney Beans, drained and rinsed
  • 4 small sourdough round boules
  • 12 cheddar cheese slices
  • 1⁄2 teaspoon garlic powder
  • 3 tablespoons grated Parmesan cheese
  • Minced parsley, for garnish

Preparation:

  1. Heat 1 tablespoon olive oil in a skillet over medium heat. Add diced onion and bell pepper. Sauté for 5 minutes, until softened. Add garlic and sauté for 2 minutes. Add ground beef and Kroger Original Chili Seasoning Mix. Break up meat into small pieces and cook until no pink remains.

  2. Transfer mixture to a 4-quart slow cooker. Add Kroger Diced Tomatoes and Kroger Dark Red Kidney Beans. Stir to combine. Cook on high for 2 hours.

  3. Preheat oven to 375oF.

  4. Slice the tops off the sourdough boules. Use a knife to cut out the insides of each boule and form a bowl. Set aside dough insides to make croutons after. Use hands to scoop out any excess dough remaining inside.

  5. Place the bowls on a sheet tray. Line the inside of each bowl with cheddar cheese slices. Bake for 10 minutes, until cheese is melted and bowl is crisp.

  6. Cut the dough insides into small square croutons.

  7. Heat another 1 tablespoon olive oil in a skillet over medium heat. Add croutons and garlic powder. Cook, tossing occasionally, until croutons are golden brown. Sprinkle Parmesan cheese over croutons and toss until cheese melts. Remove from pan.

  8. Ladle chili into cheesy bread bowls. Top with croutons. Garnish with minced parsley.
