INGREDIENTS:
Crust
* 2 packages Kroger Maple Créme Sandwich Cookies
* 3⁄4 cup melted butter
Filling
* 2 (8-ounce) packages cream cheese, softened 11⁄2 cups heavy cream
* 1⁄2 cup maple syrup
* 1 teaspoon salt
* 11⁄2 teaspoons ground nutmeg 2 teaspoons vanilla extract
Maple Brittle
* 1⁄2 cup maple syrup 1⁄2 cup sugar
* 1⁄2 cup corn syrup
PREPARATION:
# 1. Grease an 8-inch springform pan.
# 2. Place Kroger Maple Créme Sandwich Cookies in a food processor. Process cookies until completely crushed. Fold melted butter into crushed cookies.
# 3. Press cookies into the pan and up the sides to form an even crust.
# 4. Filling: In a large bowl, place the cream cheese, heavy cream, and maple syrup. Use a hand mixer to beat the filling until smooth. Add in salt, ground nutmeg, and vanilla extract. Beat until smooth. Pour filling into crust and refrigerate overnight.
Brittle
* Grease a baking sheet. Combine maple syrup, sugar, and corn syrup in a saucepan. Cook until syrup reaches 300° (hard crack) stage on a candy thermometer.
* Carefully pour into baking sheet. Allow to cool completely. Use a hammer or meat pounder to crack and use pieces to decorate cheesecake.
