Grilled Zucchini Boats

Ingredients:

4 large zucchinis

3 tablespoons Private Selection Extra Virgin Olive Oil, divided

¾ cup quartered Private Selection Cherry Snacking Tomatoes

½ cup small diced cucumber

½ cup cooked and cooled couscous

¼ cup small diced red onion

⅓ cup Private Selection Crumbled Feta

⅓ cup Private Selection Sliced Kalamata Olives

¼ cup roughly chopped parsley

¼ cup roughly chopped mint

½ teaspoon Private Selection Oregano

Juice of half a Private Selection Meyer Lemon

½ teaspoon kosher salt, plus more for seasoning zucchini

⅓ cup Private Selection Traditional Hummus

Directions:

Preheat grill on medium-high heat.

Slice zucchini in half vertically and scrape out some of the inside flesh to form a boat.

Brush both sides of zucchini boats with 2 tablespoons Private Selection Extra Virgin Olive Oil. Season with kosher salt.

Place zucchini on grill, boat side down. Grill for 4–5 minutes or until grill marks appear. Flip and cook the other side for 3–4 minutes or until zucchini is tender. Remove zucchini from grill.

In a medium bowl, combine Private Selection Cherry Snacking Tomatoes, cucumber, couscous, red onion, Private Selection Crumbled Feta, Private Selection Sliced Kalamata Olives, parsley, mint, Private Selection Oregano, Private Selection Meyer Lemon juice, 1 tablespoon Private Selection Extra Virgin Olive Oil, and ½ teaspoon kosher salt. Gently mix.

Spread the inside of each zucchini boat with Private Selection Traditional Hummus.

Fill boats with vegetable salad.

Serve!
