4 EASY MARINADES FOR 4 DIFFERENT PROTEINS
CITRUS SOY SALMON
Servings: 4–6
INGREDIENTS:
* 1⁄3 cup Kikkoman® Soy Sauce
* 2 tablespoons sugar
* 1 tablespoon Kikkoman® Sesame Oil 1⁄2 cup orange juice
* 3 tablespoons lemon juice
* 2 pounds salmon fillet
* Salt, optional
PREPARATION:
1. Whisk together Kikkoman® Soy Sauce, sugar, Kikkoman® Sesame Oil, orange juice, and lemon juice.
2. Marinate the salmon fillet in the rest of the marinade for 30 minutes.
3. Preheat grill for medium-high heat. Remove salmon from marinade and lightly season with salt, if desired.
4. Grill salmon skin-side up for 4 minutes, then carefully flip. Brush salmon with leftover marinade, close grill lid, and cook for 8 more minutes. Remove salmon from grill and serve.
PEANUT LIME CHICKEN
Servings: 4
INGREDIENTS:
* 1 cup peanut butter
* 1⁄3 cup brown sugar
* 1⁄2 cup Kikkoman® Soy Sauce
* 3 limes, juiced
* 1 teaspoon red chili flakes
* 1⁄2 cup hot water
* 2 pounds boneless skinless chicken thighs and breasts
PREPARATION:
1. Whisk together peanut butter, brown sugar, Kikkoman® Soy Sauce, lime juice, red chili flakes, and hot water, until smooth. Set aside 1⁄2 cup of peanut marinade.
2. Marinate chicken pieces in the rest of the peanut marinade for 1–6 hours.
3. Preheat grill to medium-high heat. Grill chicken for a few minutes on each side, until fully cooked.
4. Serve chicken with reserved peanut sauce for dipping.
SPICY TERIYAKI RIBS
Servings: 4
INGREDIENTS:
* 1 cup Kikkoman® Teriyaki Marinade & Sauce
* 1⁄4 cup Kikkoman® Sriracha Hot Chili Sauce
* 1 rack baby back ribs, cleaned and membrane removed
* 1⁄2 cup Kikkoman® Teriyaki Takumi, Original
PREPARATION:
1. Whisk together the Kikkoman® Teriyaki Marinade & Sauce and Kikkoman® Sriracha Hot Chili Sauce.
2. Slice rib rack in half and then marinate for 6 hours or overnight.
3. Preheat grill for low heat.
4. Wrap ribs in two layers of heavy-duty aluminum foil and use a knife to cut a small vent in the top of the foil.
5. Place packet on grill, close lid, and cook for 1 hour.
6. After an hour, unwrap ribs, and discard juices. Turn grill up to high. Brush ribs with Kikkoman® Teriyaki Takumi, Original and grill on both sides until ribs becomes caramelized, 10–15 minutes.
7. Slice ribs and serve.
HONEY GARLIC SOY STEAK
Servings: 4
INGREDIENTS:
* 1⁄3 cup Kikkoman® Teriyaki Marinade & Sauce
* 1⁄3 cup Kikkoman® Soy Sauce
* 1⁄4 cup honey
* 4 cloves garlic, minced
* 1 tablespoon vegetable oil
* 11⁄2 pounds flank steak
* Salt, optional
PREPARATION:
1. Whisk together Kikkoman® Teriyaki Marinade & Sauce, Kikkoman® Soy Sauce, honey, garlic, and oil.
2. Marinate flank steak in mixture for at least 2 hours, and up to 8 hours.
3. Preheat grill to medium-high heat. Remove steak from marinade. Lightly season with salt, if desired. Grill steak for 4 minutes on each side, then close the grill lid and cook steak for 4 more minutes.
4. Let rest for 10 minutes before slicing and serving.
