2. The right temperature.

The first step is to ensure you are lighting the grill correctly and getting it hot enough. When grilling, use a full load of charcoal with a fire starter cube and leave the dome open. Wait 5-10 minutes for the charcoal to build a small bed of embers and close the dome. Cook by internal temperature not time. Cooking by time is guessing. Always use a thermometer and your meat should be130-140 degrees for medium rare, 140-150 degrees for medium and 150-155 degrees for medium well.

3. Do not use a fork to turn your meat.

Using a fork will allow the juices to escape and dry out the meat, this is a no no. Use a tong and spatula only when turning your steak.

4. Keep the grill closed.

Do not open the grill as the mositure of the food will escape. Keep it closed and only open as needed.

5. Let the meat rest.

Cover the meat loosely after cooking and let sit for 2-5 minutes and cover with foil after cooking to give the juices time to redistribute giving you the perfect steak!
