It seemed like everyone on TikTok was making it, so as a salad-averse person, I knew I had to try it. The recipe was first posted by Baked By Melissa — yes, like the cupcake shop — and it's since gained over 19 million views on the platform.
I followed this recipe from Baked By Melissa's blog, which lists the exact measurements and instructions. Since I was only cooking for myself, I decided to cut all of the measurements in half. Next time, I'll probably reduce it even more, since halving the ingredients still made so much salad.
I started by gathering all of the ingredients, which include cabbage, green onion, and cucumber for the base. You could also add chives, but I was not able to find any at my local grocery store. For the dressing, you'll need olive oil, rice vinegar, lemon juice, garlic, shallots, spinach, basil, walnuts, and nutritional yeast.
I made the dressing first.
I poured all of the liquids into the blender...
...and then followed with the spinach, basil, walnuts, shallot, and nutritional yeast.
Then, it was blending time!
After about 30 seconds, I ended up with this creamy, vibrant, green sauce. Does that not look like the definition of ~health~ to you?
After putting aside the dressing, I began chopping my vegetables.
If you don't know how to cut vegetables, making this salad will definitely give you some practice. It felt like I was chopping this cabbage for hours.
I finally got through the rest of the vegetables and felt accomplished. This is a pretty labor-intensive salad (lol), although it was kind of fun and therapeutic to chop all the ingredients. But if you're lazy (like me), you should buy everything pre-cut. (Do they even sell chopped up cucumbers? Idk. Let me know.)
I poured on the dressing and gave it all a good stir. I ended up with this green coleslaw-looking concoction, which did not looked as aesthetically pleasing as I had hoped (but that's my fault). I probably could have cut all of the vegetables a little smaller, like how Baked By Melissa does in her video, but whatever. That's something to work on for next time.
Taste-wise, I was blown away, and as I mentioned earlier, I am not usually a salad person. The lemony pesto dressing really shined through and made the salad very light and refreshing. The cabbage and cucumbers also contributed a nice crunch so I didn't get bored of eating this. In her video, Baked By Melissa eats this with tortilla chips, but I just had it as it was, and it was still so good.
I've also seen variations of this recipe with jalapenos in the dressing. I'm definitely considering doing that next time to truly level up my salad game.
But overall, the salad was relatively easy to make. And although the preparation takes a little time, I would say that it's absolutely worth it. It's, at the very least, a must-try-once thing, for sure.
