The Healthy Melting Moments Recipe
Ingredients
Shortbread
Wet
Coconut oil (soft) - 3/4 cup
Maple syrup / honey / coconut sugar - 4 tablespoons
Vanilla - 1 teaspoon
Dry
Coconut flour - 1 cup + 5 tablespoons
Filling
Coconut oil (soft) - 1/2 cup
Maple syrup / honey / coconut sugar - 1-2 tablespoons
Lemon juice- 1-2 teaspoons
Zest of lemon - 1-2 teaspoons
Method
Shortbread
Preheat oven to 180 and line a baking tray with baking paper.
In a bowl whip the wet ingredients together with a fork until smooth, white and fluffy.
Fold in the coconut flour.
Spoon out 1.5 tablespoons of mixture roll into a bowl. These are very delicate so be careful or try to add some more coconut oil.
Place on tray and press down with a fork to flatten slightly.
Bake in oven for 8-10 minutes or until golden.
Filling
Blend or process ingredients together.
Adjust the sweeter and lemon to taste.
If it starts to become too runny place in the fridge covered for about 15 minutes and whip again.
Assemble
Sandwich two shortbreads together with about 1 tablespoon of butter cream.
Store in the fridge.
