1. Watermelon Margarita

I am really excited about a little drink I came up with called a “Kickin’ Watermelon Margarita.” It is sooooo good, with the light and fresh taste of watermelon and a little kick of spice in each sip. I wanted to create a watermelon drink, as I’ve hardly ever seen them around, and it gives me a chance to present something that will make my guests say “wow!”

2. Creamy Roasted Cauliflower Soup

This creamy roasted cauliflower soup has a vegetable broth and no heavy cream. Put this side-by-side against a store-bought creamy soup and you’ll be blown away by the comparison in taste. Then go down the ingredient lists of the two and you’ll be floored. With roasted cauliflower, coriander seeds, nutmeg and a few other veggies this healthy winter soup is packed with nutritional value.

3. Lemon Garlic Butter Shrimp

This lemon garlic butter shrimp recipe is a perfect way to cook up shrimp in a tasty and unique way. The shrimp is cooked with four different flavors that come together extremely well: honey, garlic, lemon and basil. With the shrimp having a high protein content and quinoa added to the dish I consider this to be a great option for a shrimp protein bowl.

4. Healthy Curried Carrot Soup

This creamy carrot soup is a perfect fall soup recipe to keep you healthy and warm. I added my favorite curry powder to the recipe to boost the flavor, you may skip if you don’t like curry. The light creamy soup recipe has a lot of healthy ingredients and is also free of heavy cream and butter. You can enjoy a guilt-free second bowl.

5. Roasted Garbanzo Beans with Sumac Honey Lemon Salad Dressing

Here’s a delicious, roasted garbanzo beans salad with refreshing and tangy veggies that make it unforgettable. This is a high protein salad that will actually fill you up. I added fresh curly parsley, mint, tomatoes, red onions and a surprise ingredient of goji berries, with a refreshing homemade sumac honey-lemon salad dressing.

6. Sweet Tangy Thai Salad Dressing or Dipping Sauce

Making this homemade Thai Salad Dressing doesn’t require special equipment. You can use your high speed blender, food processor or a mixing bowl and a whisk. This healthy salad dressing recipe is very nutritious and filling. Peanut butter is packed with protein, fiber and monounsaturated fats (good fats that are found in natural foods, such as olives and avocados). Apple cider vinegar could lower cholesterol, lower blood sugar, help you lose weight and boost energy.
