    1/3 cup sugar, plus 1 tablespoon

    Method In the bowl of a stand mixer, beat the egg yolks until they lighten in color. Gradually add the 1/3 cup sugar and continue to beat until it is completely dissolved. Add the milk, cream, bourbon and nutmeg and stir to combine.

    Place the egg whites in the bowl of a stand mixer and beat to soft peaks. With the mixer still running gradually add the 1 tablespoon of sugar and beat until stiff peaks form.Whisk the egg whites into the egg yolk mixture. Chill and serve.

    2 large eggs

    1/2 cup sugar

    2 tablespoons brown sugar

    Method Place the half and half, milk, cider, eggs, sugars, cinnamon, nutmeg and salt in a large saucepan. Heat over medium-low heat while whisking constantly (so you don’t have scrambled eggs!) for 15 to 20 minutes, until the nog thickens slightly and can easily coat the back of a wooden spoon. Remove from the heat but continue to whisk for another minute or two. Stir in the bourbon if desired, either in the entire pot or a few ounces into each glass. Serve in mugs with some fresh whipped cream for topping, a cinnamon stick, apple slices and a few grates of fresh nutmeg.

    Put the red wine, cinnamon, star anise, cloves, lemon zest and sugar in a large pan. Cook on a low heat for 10 mins.

    Remove from the heat and cool, leaving to infuse for about 30 mins.

    To serve, heat without boiling, stir in the sloe gin (if using) and pour into mugs or heatproof glasses.

    pure maple syrup or brown sugar 2 tablespoons

    In a medium pot over low heat, whisk together milk, cocoa, maple syrup/brown sugar, vanilla, nutmeg and chilli/cayenne. Stir in cinnamon sticks and star anise and bring to a simmer.Remove pot from heat. Cover and leave to steep for at least 1 hour (when it has cooled, place in the fridge). Just before going on your picnic, warm the spiced hot chocolate over a low heat – adding more sweetness to taste, if you like – and pour into a Thermos.

    Bring milk to boil. Stir coffee water & caramel sauce until fully incorporated with milk. Taste and sugar as per taste.

    At this point, if you have a small milk frother, use that to create foam. Transfer latte to mugs and add whipped cream on top. Drizzle with some caramel sauce and serve immediately!

    Juice the apples in a juice machine. Place the juice in saucepan together with all the spices, cover with a lid. Bring to a boil and let simmer for 1-2 minutes. Turn off the heat and let steep, covered for 5-10 minutes, then strain in a fine sieve. Juice the carrots and ginger in the juice machine. Pour the warm apple juice in the glasses, add the freshly juiced carrot juice and stir with a spoon to combine. Sprinkle some ground cinnamon and nutmeg on top before serving.

    In a microwave-safe cup, heat the milk at high power for 5 minutes, until boiling.

    Add the chopped chocolate to a 1 1/2- to 2-quart heatproof pitcher. Pour the boiling milk over the chocolate and let stand for 1 minute. Mix the milk with the chocolate by rolling a whisk or wooden Mexican molinillo between the palms of your hands, until the hot chocolate is smooth and slightly frothy, about 3 minutes. Pour the hot chocolate into mugs, dust with cinnamon and serve.

    If you have a milk frother, froth the milk and top your tea with the foamy milk. If you don’t have a frother simply stir in the milk.

    Add maple syrup and spices to the bottom of a mug, stir to combine.

    Place milk into a microwave safe jar and heat for about 30 seconds, until warm. Tightly screw lid onto jar and shake for a few seconds, until milk is foamy.

    Pour hot, strong coffee over maple syrup. Top with foamy milk. Garnish with more spices if desired.

    Peanut Butter Nutella Hot Chocolate

    1-2 tablespoons smooth peanut butter OR powdered (dry) peanut butter to cut

    Heat milk in a medium sized saucepan on medium - high heat until beginning to warm and steam. Add the spread, peanut butter, cocoa powder and sugar, and whisk until dissolved and combined. Bring to a gentle simmer while stirring, and take off heat. Serve with your desired toppings.
