Gooey Cinnamon Roll Cheesecake

Makes 1 9-inch cheesecake

INGREDIENTS

16 ounces cream cheese, softened

½ cup sugar

½ cup sour cream

1 teaspoon vanilla extract

2 eggs

⅓ cup butter, melted

½ cup light brown sugar

2 tablespoon. cinnamon

1 pack refrigerated cinnamon rolls with frosting (8 regular-sized)

PREPARATION

1. Preheat oven to 325°F/160°C.

2. In a bowl, beat the cream cheese and sugar until smooth.

3. Add the sour cream and vanilla, and beat until there are no lumps.

4. Add the eggs one at a time, mixing completely after each one. Set aside.

5. In another bowl, mix the butter, brown sugar, and cinnamon until fully combined. Set aside.

6. In a greased springform pan, press all of the cinnamon rolls flat, until they completely cover the bottom of the pan.

7. Evenly spread the cheesecake batter, then drop spoonfuls of the butter mixture onto the cheesecake batter.

8. Swirl the butter mixture into the cheesecake using a knife (try to keep it away from the edges!).

9. Bake for 30-35 minutes, until the cheesecake is firm around the edges but still slightly jiggly in the middle. Remove from oven and cool completely.

10. Top with frosting from the cinnamon rolls.

11. Refrigerate at least 4 hours.

Cinnamon Roll French Toast Bake

INGREDIENTS

2 tubes refrigerated cinnamon rolls with icing

4 tablespoons butter, melted

6 eggs

½ cup milk

2 teaspoons cinnamon

2 teaspoons vanilla

1 cup maple syrup

PREPARATION

1. Pour the butter on the bottom of a 9x13 glass baking dish.

2. Cut each cinnamon roll into 8 pieces, and spread evenly over the butter.

3. In a separate bowl, whisk the eggs, milk, cinnamon, and vanilla, and pour over the cinnamon rolls.

4. Pour 1 cup of maple syrup over the mixture.

5. Bake at 375°F/190°C for 25 minutes. Top with the icing from the cinnamon rolls.

Cinnamon Roll Breakfast Muffins

INGRIDIENTS

6 eggs

½ cup milk

½ cup heavy cream

2 teaspoons vanilla extract

2 teaspoons cinnamon

½ cup sugar

2 packs cinnamon rolls

PREPARATION

1. In a medium bowl, mix eggs, milk, cream, vanilla extract, cinnamon, and sugar.

2. Cut each cinnamon roll into 8 pieces, and stuff inside a greased muffin tin. Pour batter in each tin about ¾ of the way. If you pour too much, the tin will overflow in the oven.

3. Cover the tin and refrigerate for at least 2 hours, letting the cinnamon roll absorb the mixture.

4. Bake at 350˚F/175˚C for 35 minutes.

5. Remove the muffin from the tin, top with icing, and serve warm. Enjoy!

Cinnamon Roll Monkey Bread

INGREDIENTS

2 10- to 13-ounce package cinnamon buns

2 8-ounce packages cream cheese, softened

1 cup sugar

1 teaspoon vanilla

PREPARATION

1. Preheat oven to 350ºF/175ºC.

2. In a large bowl, mix together cream cheese, sugar, and vanilla.

3. Open cinnamon roll packages and flatten them out one at a time. Then place about a tablespoon of cream cheese mix in the center, and fold dough around it to form a ball. Repeat with all.

4. In a small bowl, mix together cinnamon and sugar, and roll the dough balls in the mixture.

5. Heavily spray cooking spray in a bundt pan and pour one container of icing around the bottom of the pan.

6. Place the balls in and pour second icing container evenly over the top.

7. Place in oven for 40 minutes.

8. Allow to cool for 5 minutes and enjoy!

Cinnamon Roll Poke Cake

1 box white cake mix, baked according to instructions in a 9x13 inch dish

8 tablespoons butter, melted

⅓ cup brown sugar

1 teaspoon vanilla

1 teaspoon cinnamon

½ cup sweetened condensed milk

8 ounces whipped topping

PREPARATION

1. With the end of a wooden spoon, poke 24 holes in the cooled white cake.

2. In a bowl, mix the butter, sugar, vanilla, cinnamon, and condensed milk until smooth.

3. Pour the butter mixture over the cake, smoothing it out into the holes. Cover with a layer of whipped topping.

4. Chill for 4 hours.

5 granny smith apples

2 cans cinnamon rolls

½ cup sugar

1 teaspoon cinnamon

1 tablespoon cornstarch

PREPARATION

1. Preheat oven to 350°F/180°C and spray a pie dish with nonstick oil.

2. Peel and cut the apples into thin slices and place in a bowl.

3. Add sugar, cinnamon and cornstarch to apples and stir.

4. Cut each cinnamon roll in half and roll out with flour until thin.

5. Layer the bottom of the pie dish with the flattened cinnamon rolls to create a bottom crust.

6. Add the apples and layer the rest of the rolls on top to create a closed crust, pinch any holes together with your fingers.

7. Cover with foil and bake for 35 minutes.

8. Remove the foil and bake for another 10 minutes uncovered.

9. Allow the pie to cool and drizzle with icing.
