1. Caribbean Sunset

60g sugar
8 mint leaves
500g strawberries, chopped and destemmed
100ml white rum
Lots of ice!

(makes 4)

# Start off by making sugar syrup – mix sugar with equal parts water in saucepan and bring to a boil.

# When the sugar’s gone, turn off heat and give it some time to cool down. Once it’s back to room temperature, add in mint and let sit for about an hour to let it infuse. (Depending on just how minty you’d like the taste, you can add/subtract the amount of leaves you use.)

# Once you’re ready, toss strawberries, rum, and ice into blender before adding 3 tablespoons syrup. Turn on and blend until you get that nice slushie consistency.

2. Triple Berry Blast

20 blackberries
20 blueberries
20 raspberries
1 lemon
1 lime
1 Tbsp. simple syrup
200ml vodka
Crushed Ice

(makes 4)

# Lightly mash together all fruit (berries, lemon, and lime) with simple syrup in a jug or cocktail shaker. Be careful not to go overboard – you just want to begin to release some of the juices from each, rather than pulverise them.

# Add in vodka, give it a mix, and strain into glass.

# Fill with crushed ice, stirring as you go, and voilà!

3. Spiked Watermelon Slushie

900g watermelon, cubed and frozen
250ml sparkling water or tonic
100ml vodka
80g sugar
Half freshly squeezed lemon
A dash lemon zest

(serves 4–6)

# Blend everything together, adding more sugar if necessary to balance out watermelon.

# Serve immediately for instant refreshment!

4. Peach and Mango Sangria Storm

1 bottle chilled white wine
100ml peach liqueur
1 orange
1 lime
300g frozen peach chunks
300g frozen mango chunks

(serves 5–6)

# Add all ingredients into blender and serve as soon as mixture runs smooth.

1 bottle rosé
200g mixed berries (your choice!)

(makes 4–5)

# Pop everything into blender and mix until you’ve got a nice, mushy blend. Strain it to get rid of leftover bits and then place in shallow dish or tray suitable for freezer.

# Freeze for 2 hours, taking out every 30 minutes to give it a bit of a stir with fork.

# Remove, allow it a few minutes to settle, and serve!

6. Sublime Slime (That's Strawberry and Lime!)

100ml Caribbean rum
100ml vodka
100ml peach liqueur
500g frozen peach chunks
500g frozen pineapple segments
A dash bitters
Cherries to garnish

(serves 4–5)

# This one packs a punch! Add together spirits and pour in blender with fruit, blending until smooth.

# Serve immediately with drizzle of bitters to give it some extra sparkle and top off with cherries (and possibly a cocktail umbrella)!

7. Strawberry Mojitos

500g frozen strawberries (you can buy fresh and freeze them yourself)
75ml vodka
60ml fresh lime juice
60g sugar
500ml water
Ice cubes

(serves 3–4)

# Add all ingredients to blender and mix until smooth. Add more water if you find the mixture is too thick!

500g frozen mango chunks
125g strawberries
60g blueberries
100ml whiskey
250g ice cubes

# Blend all your fruit, ice, and whiskey until you have your preferred consistency, then serve immediately. Instant party!

400g vine tomatoes
50ml lemon juice
1 Tbsp. Worcestershire sauce
1 dash hot sauce
2 Tbsp. prepared horseradish
1 dash celery seeds
200ml vodka, chilled
1 can (400ml) tomato juice
Lemon wedges to garnish

(serves 4–6)

# Chop up tomatoes into wedges and freeze overnight. Once prepared, puree in blender with lemon juice, sauces, horseradish, celery seeds, plus a pinch of salt and pepper.

# Next, add in your vodka and tomato juice and give it a small quick spin to ensure it's fully mixed.

# Serve with lemon wedges on top.

10. Bourbon Tea Party

125ml bourbon whiskey
2 large black tea bags
500ml water
175ml cloudy lemonade
100ml fresh orange juice
60g sugar

(makes 2–4)

# Blend everything together for a few minutes, then place in freezable tray for 2 to 3 hours.

# Check on mixture every 30 minutes and scrape away what’s sticking to the sides. Once ready to take out, thaw for 5 minutes then serve straight away.
