Here's A Healthy-Ish Way To Turn PB&J Into French Toast

    PB&J went and got a grown up makeover and you're gonna like it.

    FACT: Peanut butter and jelly is the most fun and delicious thing that's ever happened between two slices of bread.

    But it's not always the healthiest, especially when you're using store-bought jelly and processed peanut butter.

    So, we made a version that uses frozen mixed berries (plus a little honey for ~fun~) and natural, unsweetened almond butter.

    Oh, and did I mention that we turned the whole thing into FRENCH TOAST?

    Almond Butter And Jelly French Toast Sandwiches

    Makes 4 servings

    INGREDIENTS

    2 cups frozen mixed berries (or, you can use fresh)

    1 tablespoon + 1 tablespoon honey

    4 tablespoons almond butter

    8 slices whole wheat bread

    2 large eggs

    2 large egg whites

    1 cup unsweetened almond milk

    1 teaspoon pure vanilla extract

    Nonstick cooking spray


    PREPARATION

    In a small bowl, microwave the frozen berries and 1 tablespoon honey until the berries are very soft. Stir everything together to mash the berries a little bit. Divide the berries among 4 slices of bread, then spread 1 tablespoon almond butter over the other 4 slices and pair the slices together to make 4 sandwiches.

    In a small, shallow dish, whisk together the eggs, egg whites, almond milk, vanilla extract, and 1 tablespoon honey.

    Spray a large, nonstick skillet with cooking spray and heat it over medium-low heat. Soak a sandwich on both sides in the egg mixture, then lay the sandwich in the nonstick skillet. Work in batches, cooking 2 sandwiches at a time. Cook each sandwich until the underside is dark golden brown and slightly crispy, about 3 minutes. Flip and continue to cook until both sides are golden brown and crispy and the insides are heated through, about 3 minutes more. Serve warm.
