California Avocado Fries With 4 Dipping Sauces

Preparation

CALIFORNIA CILANTRO SAUCE

INGREDIENTS:

1 California Avocado

Half a bunch cilantro, large stems removed

Juice of 1 lime

½ teaspoon salt

½ cup water

PREPARATION:

1. Cut avocado in half, remove pit, and then scoop out flesh.

2. Place all ingredients in a blender. Blend until smooth.

CALIFORNIA AVOCADO RANCH

INGREDIENTS:

1 California Avocado

¼ cup Greek yogurt

Juice of 1 lemon

1 tablespoon milk

1 teaspoon dried parsley

1 teaspoon onion powder

½ teaspoon garlic powder

½ teaspoon dried dill

1 teaspoon salt

¼ teaspoon pepper

1 tablespoon chopped chives

PREPARATION:

1. Cut California Avocado in half, remove pit, and scoop out flesh.

2. Place avocado flesh, Greek yogurt, lemon juice, and milk in a food processor. Process

for a minute until mostly smooth.

3. Add the rest of the ingredients and continue to process until well-incorporated, scraping

down the sides of the bowl as needed.

SUN-DRIED TOMATO AIOLI

INGREDIENTS:

1 cup mayonnaise

⅓ cup sun-dried tomatoes

1 teaspoon salt

Zest of 1 lemon

PREPARATION:

1. Place all ingredients in a food processor. Process until smooth, about 1–2 minutes,

scraping down the sides as needed.

HONEY GARLIC SAUCE

INGREDIENTS:

1 tablespoon butter

3 cloves garlic, minced

½ cup soy sauce

⅓ cup honey

1 tablespoon rice vinegar

2 teaspoons cornstarch

1 tablespoon water

Sesame seeds, for garnish

PREPARATION:

1. Melt the butter in a small saucepan over medium heat. Add in minced garlic and sizzle

for 1 minute. Pour in soy sauce, honey, and rice vinegar and stir. Bring to a light simmer.

2. In a small bowl, stir the cornstarch and water together, then pour into the sauce.

Continue to heat the sauce and stir until thickened, 1–2 minutes. Remove from heat and

sprinkle with sesame seeds.
